Pork Tofu Bento
Day Two of biking to work was just as agonizing, though slightly improved because I could immediately dismount today. Unfortunately, my search for my black backpack is still ongoing and thus, Wall-E made an appearance yet again. It struck me on the way to work that I probably shouldn’t have mentioned the backpack because I know people at UH read my blog sometimes and it would be utterly humiliating to have someone in a car yell out their window at me, “HEY PIKKO!!!”
I wouldn’t even be able to gasp a Hello back out of a combination of shame and my tendency to be gasping desperately for air. I try to hold my breath whenever I pass pedestrians so that they don’t hear me and wonder why I’m biking so awfully slow. The good news is, the ride home is blissfully nice and fast!
Hopefully Mr. Pikko doesn’t read this because he might take it upon himself to go driving around looking for me just to yell hi.

I have been telling myself for a while that I need to buy and try some radishes as Mils over at Not a Brown Bag has been putting them into her lunches a lot. I’m sure by now she’s sick of me commenting about trying radishes, so she’ll be happy to know that I finally bought some and ate it in a salad last night.
While they tasted great with dressing, I am not really a fan of them straight up as the spiciness and tongue tingling effect were a little too much for me. That being said, I still love them for color and if I could just remember to bring a bottle of salad dressing to keep at work, this might be an awesome color addition to my lunches! I’ll have to see if I can find any quick pickling recipes for radish. I’m sure there are bizillions out there.
In today’s bento I have leftover pork tofu from last night, Gen-ji-mai rice, pickles, radish, and some cutie slices. Mr. Pikko just stuck my green onions into his grow bed and they’re already growing, so I picked some this morning to put onto the tofu.
Pork Tofu Bento Points Calculation
2 oz ground pork – 4 points
2/3 cup tofu – 4 points
1/2 cup brown rice – 3 points
fruits, veggies, pickles – 0 points
Total: 11 points
Snacks: 2 small sweet potatoes, 4 large strawberries, 2 cuties, 1 banana
Weight: 150 lb
Small gain today, which I’m attributing to my body crying out in pain from Day 1 biking. It drives me crazy how many points tofu is. I’d eat a lot more edamame and tofu if it didn’t cost so much. There’s a small amount of sugar in the pork tofu, but it’s so little that I didn’t bother to count it. 1 tbsp of sugar is 1 point and since I put 2 tbsp in the whole dinner, this is probably only around 1 tsp, which is 0 points.
I think this actually means I could make myself iced coffee for only 2 points. Woot!

Hi Pikko- that cracks me up again! I can’t imagine which hill you are going up- I was trying to think back as to what hills are in the UH area- but oh yeah… those… (Some of my ext. family lives on Kanewai)- anyways- back to bento. I had a question for you but couldn’t find the area to ask- so i’ll ask here… were you the one mentioning that in re: to size of the bento, that is about how many cals. it holds? I.E.: 300ml bento=about 300 cals. give or take? Wondered b/c as you know, i’m doing WW as well- just used my cute tiffen, filled it w/ pasta and the other w/ salad. I was surprised that after I dumped it out to heat up, it held ALOT and I couldn’t finish it all. Not to mention that I originally thought i’m gonna starve!
@Hegora: Keep your eye on the finish line and you’ll get there– we all have to start somewhere– keep your goals small and reward yourself (as in not food) when you get mini-goals!

Yeah, you can always cram a good amount of food into a bento. I have a hard time filling up the bigger ones.
As for the calories thing, I don’t really know, I just go off of what I’ve read on other bento sites. I’ve never really verified it myself!
