Ham & Cauliflower Bento
Last week, I was at a loss for what to pack for lunch, so improvising something Maki made in one of her bentos in Yum-Yum Bento Box, I fried cauliflower and ham and packed it with leftover roasted roots, rice, and a soft boiled egg.

It turned out pretty yummy, with the ham providing a nice salty sweet coating for the cauliflower. The roasted veggies are leftovers. I had bought a pre-cut pack of butternut squash and roasted some of it with baby carrot. The baby carrots were disappointingly half cooked, but the squash was yummy.

Here’s a closer look. I didn’t really want a soft boiled egg, but when you take the egg out of the water and cut it in half, it’s kind of too late at that point, right? Haha!

One time I undercooked a hard boiled egg, so I got the brilliant idea of poking the egg through with a skewer and then putting the egg in the microwave to cook it more. Just a warning: do not try this at home.
